After a long career in the public sector, and a move from SE England to NW England, I decided to create a small business using my personal love of cooking.
In late 2019 we started growing fresh gourmet mushrooms and making grow-your own oyster mushrooms kits for sale online. Then, of course, the pandemic hit in early 2020 and our fresh mushroom sales plummeted.
So ..... what to do with fresh mushrooms you can't sell?
I know ..... let's make new and unusual gourmet mushroom foods. Let's make jars of unusual, delicious and nutritious mushroom foods that will be good for gifts, on buffet tables, with cheeses, meats, crusty breads, salads and spicy curries.
And so we embarked on researching, making, trialling, tasting and refining all kinds of gourmet mushroom recipes. Eventually we came up with three winning mushroom "extras" : king oyster antipasti, spicy mushroom curry pickle and mushroom chutney. A Mediterranean zesty antipasti, a medium spiced curry complement and a sweet addition for cheeses, cold meats and sandwiches.
We stopped mushroom growing in 2022 (it is hard, physical work). We now buy quality mushrooms from a Lancashire wholesaler and concentrate on making delicious and nutritious gourmet mushroom products.
You can find us, and our gourmet mushroom products, at many markets (particularly Farmers' Markets) across north west England and the Scottish Borders. We also sell through a select band of small, independent retailers, across the UK.
Lastly - our new Shiitake Mushroom Jerky is really going well. It's an amazing ready-to-eat nutritious, tasty, (and unusual) snack.
